How can I tell if my sent email has been read by the recipient?

You can't... unless you request a receipt. It's an option on your email message page. When the recipient receives your email, they get a message asking if they want to return the receipt, to notify you that they read they email. They can then acknowledge receipt, or cancel and not read it.
